School Food Service Management Rotation
I spent six weeks at Cupertino Union School District (CUSD) with the Student Nutrition Services Director and the food service RD. During this rotation I:

Supervised brunch and lunch service and helped serve meals at elementary and middle schools

Proposed implementation of a Flavor Station at middle schools' lunch service

developed resources for Flavor Station – sourced supplies, product and equipment pricing, inventory catalogs; planned distribution and service of stations in middle school cafeterias​

created Flavor Station marketing flyer and signs

presented Flavor Station project at kitchen supervisors' meeting, discussed staffing needs, equipment, and set-up instructions

Sourced gluten-free menu items for students with dietary restrictions

Developed projects, flyer, and materials adhered to nutrition guidelines for National School Lunch Program

Created CUSD Student Nutrition Service brochure

Conducted fruit tastings for 5210 program and measured students’ receptivity by counting votes with hedonic scale baskets

Evaluated nutrition of potential snacks to be offered at middle schools for compliance to nutrition guidelines

Evaluated and reformulated mac & cheese recipe to meet grain and meat alternative requirements

Used Titan, the online meal payment and transaction system for students’ meal accounts to: analyze daily meal count totals, record total daily balance, deposit cash and checks to students’ accounts and monitor for errors (i.e. negative balances)

Promoted Breakfast Before School pilot program at Nimitz Elementary via prize drawings to student participants
